what is your favorite sweet potato recipe?

i picked up some sweet potatoes coz her the are great for skin. but have no clue how to have them.
any ideas?

i like them baked in the oven as you would a regular potato, the skin is great baked just open in the oven but you can wrap in foil too if you like a softer skin.
also, if you’re in a rush, cooked in the microwave with a dash of butter or sour cream, or just plain. pierce the skin with a fork a few times when baking or microwaving.
they cook faster than reg. potato’s. great boiled and mashed. makes great french fries too, fried in oil or baked in the oven with a little olive oil.
