A question for Pastry Chefs/Cake Decorators..?


I really want to be a pastry chef/ cake decorater, but I’m not able to go to culinary school anytime soon. I want to practice on my own, to be as best as I can be. I love to do this for fun, for my home.

Can you give me a little idea of what to practice first and so on. I bake well. (I sometimes get paranoid when I do something especially when it’s baking, to see when it’s done or not. I hope after a while this will stop, and it will just come to me.)

I have a lot of cookbooks I want to practice with, and a good amount of tools, not everything (yet lol). I also have some cake decorating books, but I just wanted to get some of your opinions, since your pros.I really want to learn how to bake great and decorate cakes beautifully, and master it. It’s a dream for me. I love watching Cake Boss, Cake competitions, etc…

I am a Qualified, Trained Aussie Chef by Trade who also has a Small Wedding and Occasion Cake business. At many of the Restaurants I worked at I was often in charge of the Desserts of Pastry Section as well as working ‘the line’ as the US calls it, in Australia we call it The pass. I was often on the Pans section. I mainly use fondant rather than Buttercream on my cakes. I think you have a lot of passion which is the fundamentals. Go to the library and hire out any books you can get your hands on. Learn Fondant work, it seems to be the Future of Cakes in America, it is well established throughout the UK and Australia. Go to a small decorators class where they teach how to pipe using buttercream and Royal Icing and how to made sugar flowers is essential. These classes can often be short small classes. Learn how to make all ingredients yourself rather than buying ready bought this is essential for understanding it’s properties and the taste is often Superior when compared to bought plus it gives you that cutting edge and level of professionalism. Have fun you sound like you have the passion for sure, this is an amazing path you are taking so follow your dreams!!!
