i am head chef of a popular hotel and have been asked to write a cookbook?

my boos(the hotel owner has asked me to write a cookbook that can be sold as the hotel cookbook, i have been offered a commision based on sales to do it and a write up on myself in the book, now the book will consist of my recipes.
what i want to know is where do i stand, what rights do i have, they are my recipes and i would like to know what the result would be if i were to leave and work fore another company or open my own establishment can i use these recipes again, am i giving up the rights to them.
i have recently read gordon ramsay’s book “playing with fire” and in it he speaks about this very thing and calls it the value of his intellectual property, basically knowing how much your knowledge is worth, i.e. recipes, and putting a price on it,
if anyone can shed a bit of light on this for me it would be great.thanks
