What are some almost completely fat free/carb free recipes~like your favorites?thanks?

during the week i try to go for easy and efficient (i work and have kids) but also with some nutritional value.
for a meal in one serving:
i get skinless chicken thighs (i prefer this to breast, less dry), assorted veggies, you can leave out the ones high in carbs but i add big chunks of potatoes, yams, mushrooms, leeks, carrots, turnips, cauliflower..you get the point, throw everything in a cooking bag, make some kind of interesting barbecue sauce ( usually i make a tomato puree base mixed with honey, garlic, can add some wine, salt, pepper, or add any interesting spices you like, my kids don’t like very aromatic so i leave that out) throw the sauce in the cooking bag, shake the ingredients up a bit so everything is covered, tie the end of the bag, place in baking tray – it shouldn’t be too tightly packed, everything should sit in one layer, and slit a hole on top for the steam to escape, in a preheated oven (about 180 C, 350 F) for 1.5 hours (you can carefully shake it around a bit during the baking to remoisten the meat and veggies). everything comes out flavored, roasted but not dried out, serve with a green salad on the side… easy and hearty.
