I need some really great christmas cookie recipes, not the usual things people are used to, Im going to give?
them as gifts. (cookies, fudge, bars, ext.)
****CHOCOLATE COVERED CHERRIES CANDY
2 1/2 (1 lb.) boxes powdered sugar
1 can Eagle Brand milk
1 stick butter
1 tsp. vanilla
Maraschino cherries (drained), or nuts or coconut
1 lg. pkg. chocolate chips
2 tbsp. butter
Mix together the first 4 ingredients and work up real good. Make small balls and insert maraschino cherries, nuts or coconut. Spread on waxed paper then mix the next 2 ingredients in double boiler to melt. Dip balls in chocolate mixture. Place on waxed paper and cool. Makes about 4 dozen.
Merry Cheesecake Cookies
1 cup all-purpose flour
1/3 cup unsalted butter, softened
1/2 cup firmly packed light brown sugar
1/2 cup chopped toasted nuts of any kind
Filling:
1 (8-ounce) package cream cheese, at room temperature
1/4 cup sugar
1 egg, at room temperature
2 tablespoons milk
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla
Red and green sanding sugar, for decorating, optional
Preheat oven to 350 degrees F.
Line an 8 by 8-inch square baking pan with parchment paper. Let parchment come up over the sides of the pan to use as “handles” when unmolding after baking. In a mixer bowl, combine flour, butter, and brown sugar. Blend at low speed until incorporated and mixture is like sand, about 2 to 3 minutes. Stir in nuts. Reserve 1 cup of mixture for topping. With your fingers, press remaining mixture into pan. Bake on the middle rack of the oven until crust is set and golden brown, about 8 to 10 minutes. Let cool on a rack while assembling the filling.
In a clean mixer bowl, combine cream cheese and sugar. Blend until smooth, then add the remaining filling ingredients, beating until smooth. Spread evenly over baked crust. Sprinkle the reserve crust mixture over filling. Bake until top is golden brown and filling is set, about 25 to 30 minutes. Let cool completely on a rack, then use parchment “handles” to remove from pan in 1 piece. Cut into bars, squares or festive shapes with cookie cutter of your choice. Sprinkle with red and/or green sanding sugar, if desired.
Yummy Little Almond Sandwich Cookies
INGREDIENTS
Cookies
1roll (16.5 oz) Pillsbury® Create ‘n Bake® refrigerated sugar cookies
1/2cup all-purpose flour
1/2teaspoon almond extract
1tablespoon granulated sugar
Filling
2cups powdered sugar
1/4cup butter or margarine, softened
4teaspoons milk
1/4teaspoon almond extract
1drop red food color
DIRECTIONS
1.Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in flour and almond extract until well blended.
2.Shape dough into 180 (1/2-inch) balls. Place balls 1 inch apart on ungreased cookie sheets. Press bottom of glass dipped into granulated sugar on each ball until 1/4 inch thick; prick top of each with a fork.
3.Bake 6 to 8 minutes until set but not brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
4.Meanwhile, in small bowl, beat filling ingredients with electric mixer on low speed until smooth and creamy. Spread about 1 teaspoon filling on bottoms of half of the cookies. Top each with another cookie, bottom side down; press gently. Store in refrigerator.
