What are some of the best books for chefs-in-the-making(not recipe books)?

My younger sister is 16 and will celebrate her birthday in one month. All she thinks about is food. She can sit for hours with a recipe book just to look at the pictures and/or study the ingredients. She actually has a large collection of cookbooks so I don’t plan on getting her any. She dreams of becoming a chef and opening her own restaurant someday.
